Product Introduction
Galacto-oligosaccharides (GOS) is a naturally occurring functional oligosaccharide. Its molecular structure typically consists of 1 to 7 galactose units linked to a glucose or galactose molecule, represented as Gal-(Gal)n-Glc/Gal (where n is 0-6). GOS occurs naturally in small amounts in animal milk, with a higher concentration in human breast milk, which is crucial for establishing the bifidobacteria population in infants.GOS is produced from lactose in cow's milk through enzymatic hydrolysis using β-galactosidase, which breaks down the galactosidic bonds to generate galactose and glucose. The hydrolyzed galactosides are then transferred to lactose molecules, forming a colorless transparent or light yellow syrup.Naturally occurring in animal milk, GOS is present in higher amounts in human milk. GOS has a pure sweet taste, low caloric value, and a sweetness level of 20% to 40% of sucrose. It has excellent moisture retention properties and high thermal stability under neutral pH conditions. GOS does not decompose when heated at 100°C for 1 hour or at 120°C for 30 minutes. When heated with proteins, GOS can undergo a Maillard reaction, making it suitable for processing special foods like bread and pastries.The Ministry of Health of the People's Republic of China approved GOS as a new food resource in its 2008 Announcement No. 20, specifying its usage standards.
Production Process
Lactose from cow's milk is used as the raw material. It is enzymatically hydrolyzed using β-galactosidase to break the galactosidic bonds, generating galactose and glucose. The hydrolyzed galactosides are then transferred to lactose molecules, forming GOS.
